Ingredients1600g frozen skin-on thin fries
21 tbsp olive oil
3Pinch of salt & black pepper
41 tbsp truffle oil (white or black, depending on taste)
5½ cup shredded mozzarella (melts creamy)
6¼ cup grated Parmesan cheese (salty, nutty finish)
71 tbsp fresh parsley, finely chopped
8Extra Parmesan shavings
9A drizzle of garlic aioli or truffle mayo
Directions1-Preheat oven to 220°C (425°F).
-Spread frozen skin-on thin fries evenly on a baking sheet.
-Toss lightly with olive oil, salt, and black pepper.
-Bake 15–20 minutes, flipping halfway, until golden and crisp.
2-Once fries are nearly done, remove from oven.
-Sprinkle mozzarella and half the Parmesan over the hot fries.
-Return to the oven for 2–3 minutes, just until cheese melts and turns gooey.
3-Remove fries from oven.
-Drizzle lightly with truffle oil (a little goes a long way!).
-Sprinkle the rest of the Parmesan and fresh parsley on top.
4-Transfer to a platter or small cast-iron skillet.
-Garnish with extra Parmesan shavings and drizzle with aioli or truffle mayo if desired.
