Ingredients1600g frozen skin-off classic cut fries
21 tbsp olive oil
3Pinch of salt & black pepper
4½ cup crumbled feta cheese
5½ cup cherry tomatoes, diced (or halved)
6½ cup cucumber, diced
7¼ red onion, thinly sliced (optional, for sharpness)
8¼ cup Kalamata olives, sliced
92 tbsp fresh parsley, chopped
101 tbsp fresh dill, chopped (optional, extra Mediterranean flavor)
11½ cup tzatziki sauce (or Greek yogurt with garlic, lemon & olive oil)
12Extra olive oil for finishing
Directions1-Preheat oven to 220°C (425°F).
-Spread frozen skin-off fries on a baking sheet.
-Toss lightly with olive oil, salt, and pepper.
-Bake 20–25 minutes, flipping halfway, until golden and crispy.
2-Dice tomatoes and cucumber.
-Slice red onion thinly and olives into rounds.
-Chop parsley and dill.
-Crumble feta cheese.
3-Place hot crispy fries on a large serving platter.
-Sprinkle evenly with feta, tomatoes, cucumber, onion, and olives.
-Drizzle tzatziki sauce (or garlicky Greek yogurt) over the top.
4-Garnish with parsley, dill, and a light drizzle of olive oil.
-Serve warm as a side dish or a shareable appetizer.
