Ingredients1600g frozen skin-on classic cut fries
21 tbsp olive oil
3Pinch of salt & black pepper
42 tbsp unsalted butter (or olive oil for dairy-free)
53 garlic cloves, minced (or 1 tsp garlic paste)
61 tbsp fresh rosemary, finely chopped
72 tbsp grated Parmesan cheese (optional, for extra flavor)
8Extra rosemary sprigs
9Flaky sea salt
Instructions1Preheat oven to 220°C (425°F).
2Spread the frozen skin-on fries on a baking sheet.
3Toss lightly with olive oil, salt, and black pepper.
4Bake 25–30 minutes, flipping halfway, until golden and crispy.
5While fries bake, melt butter in a small skillet over low heat.
6Add minced garlic and rosemary.
7Sauté 1–2 minutes until fragrant (don’t let garlic burn).
8Remove from heat and set aside.
9Once fries are crisp, transfer to a large mixing bowl.
10Pour the garlic rosemary butter over the hot fries and toss to coat evenly.
11Sprinkle Parmesan (if using) and toss again.
12Transfer fries to a serving platter.
13Top with a little flaky sea salt and fresh rosemary sprigs.
14Serve hot with a side of garlic aioli or marinara sauce for dipping.
