Ingredients1600g frozen skin-on classic cut fries
21 tbsp olive oil
3Pinch of salt & black pepper
42 tbsp unsalted butter (or olive oil for dairy-free)
53 garlic cloves, minced (or 1 tsp garlic paste)
61 tbsp fresh rosemary, finely chopped
72 tbsp grated Parmesan cheese (optional, for extra flavor)
8Extra rosemary sprigs
9Flaky sea salt
Directions1-Preheat oven to 220°C (425°F).
-Spread the frozen skin-on fries on a baking sheet.
-Toss lightly with olive oil, salt, and black pepper.
-Bake 25–30 minutes, flipping halfway, until golden and crispy.
2-While fries bake, melt butter in a small skillet over low heat.
-Add minced garlic and rosemary. Sauté 1–2 minutes until fragrant (don’t let garlic burn).
-Remove from heat and set aside.
3-Once fries are crisp, transfer to a large mixing bowl.
-Pour the garlic rosemary butter over the hot fries and toss to coat evenly.
-Sprinkle Parmesan (if using) and toss again.
4-Transfer fries to a serving platter.
-Top with a little flaky sea salt and fresh rosemary sprigs.
-Serve hot with a side of garlic aioli or marinara sauce for dipping.
